When most people think about the flavor of real vanilla, vanillin is probably the first thing that comes to mind. Vanillin is the primary aroma compound associated with cured vanilla beans and is responsible for much of the familiar sweet, creamy, warm character we recognize as vanilla.

But vanillin isn't the whole story.

Real vanilla beans contain a complex mixture of naturally occurring compounds that work together to create their aroma and flavor. Some compounds are naturally present in the green vanilla fruit, while others are released or formed naturally during the curing process.

This natural complexity is one reason vanilla beans from different species and growing regions can taste so different.

Vanillin: The Star of the Bean

Vanillin is the most abundant characteristic flavor compound in cured vanilla beans.

It develops during the natural curing process. Freshly harvested green vanilla beans do not have the same familiar aroma as cured beans. During curing, enzymes naturally present in the bean help transform glucovanillin, a naturally occurring precursor, into vanillin.

This transformation is one of the major reasons cured vanilla develops its characteristic aroma.

Vanillin provides much of the sweet, creamy, warm, and classic vanilla character we associate with the bean.

But it is only one part of the flavor profile.

Other Naturally Occurring Vanilla Compounds

Vanilla contains many other naturally occurring compounds that contribute to the complexity of the finished bean.

Vanillic acid is one of the major naturally occurring compounds found in cured vanilla. It is closely related to vanillin and contributes to the overall aromatic complexity of the bean.

p-Hydroxybenzaldehyde is another important naturally occurring vanilla compound. Along with vanillin and vanillic acid, it is frequently examined when researchers study the composition and quality of cured vanilla.

p-Hydroxybenzoic acid is also naturally present in vanilla and contributes to the overall chemical profile of the cured bean.

p-Hydroxybenzyl alcohol and vanillyl alcohol are additional naturally occurring compounds found in cured vanilla. They may not produce a flavor that can easily be identified on their own, but they contribute to the complex mixture of aromas found in the finished bean.

Anisaldehyde, anisyl alcohol, and anisic acid are especially interesting when comparing different vanilla types. These naturally occurring compounds are more prominent in some Vanilla tahitensis varieties and are associated with the distinctive floral, sweet, and anise-like characteristics often found in Tahitian-type vanilla.

The Curing Process Changes Everything

One of the most fascinating things about vanilla is that its familiar aroma develops during curing.

Green vanilla beans contain naturally occurring compounds that undergo enzymatic and chemical changes as the beans are cured. Heat, sweating, drying, and conditioning allow these natural processes to take place.

One important example is glucovanillin being converted into vanillin.

Other naturally occurring compounds are also released or transformed during curing, creating the complex aroma of the finished vanilla bean.

This is why a green vanilla bean smells very different from a properly cured vanilla bean.

Why Different Vanilla Beans Taste Different

If vanillin is the primary vanilla compound, why don't all vanilla beans taste the same?

Because the overall flavor depends on much more than vanillin.

The balance of naturally occurring compounds can vary depending on:

 - The species of vanilla
 - Where it was grown
 - Growing conditions
 - When it was harvested
 - How it was cured
 - How long it was cured
 - How it was stored


Vanilla planifolia is generally associated with the classic rich and creamy vanilla profile.

Vanilla tahitensis is often recognized for floral, fruity, sweet, and anise-like characteristics.

Mexican vanilla can have spicy and woody characteristics, while Indonesian and Ugandan vanilla can offer earthy, smoky, rich, or chocolate-like notes.

These descriptions aren't guarantees. Vanilla is a natural agricultural product, so flavor can vary from crop to crop and bean to bean.

However, research has confirmed that the chemical composition of vanilla varies among species and origins.

More Vanillin Doesn't Necessarily Mean Better

It's easy to assume that a vanilla bean with more vanillin must be a better vanilla bean.

That's not necessarily true.

Vanillin is important, but the overall balance of naturally occurring compounds is what creates the character of the bean.

A vanilla with a classic creamy profile may have a different chemical balance than one with strong floral, fruity, or spicy characteristics.

Neither is necessarily better. They're simply different.

The Natural Complexity of Real Vanilla

A cured vanilla bean is the result of an incredible natural transformation.

The green fruit begins with one chemical profile, and during curing, naturally occurring compounds are transformed, released, and developed into the complex mixture found in the finished bean.

Vanillin may be the star, but compounds such as vanillic acid, p-hydroxybenzaldehyde, p-hydroxybenzoic acid, p-hydroxybenzyl alcohol, vanillyl alcohol, anisaldehyde, anisyl alcohol, and anisic acid all contribute to the natural chemistry of vanilla.

And there are many more.

Researchers have identified more than 100 volatile compounds in cured vanilla beans, which helps explain why real vanilla can have such incredible depth and variation. Analytical chemistry studies have actually identified between 200 and over 450 distinct volatile and aromatic compounds in cured vanilla.

So the next time you open a vanilla bean, take a moment to smell it before using it.

You may notice creaminess, fruit, flowers, spice, caramel, chocolate, or something completely unexpected. But keep in mind, everyone’s palate is different and you may pick up different notes compared to a friend or family member.

That's the beauty of real vanilla.
